Salad Challenge: Days 4, 5, and 6

I did it! I successfully came up with 6 unique salads (the 6th being inspired by one of my restraunt favorites). I hope you enjoy trying them out!

Salad Challenge Day 3

 

 

 

 

 

 

 

 

Everyone needs a good Asian salad recipe in their  stash. This sweet/tangy mix makes you feel nice and healthy as you chew, chomp, crunch! Been to a hibachi restaurant recently? This dressing tastes just like the one they put on their appetizer salad!

Little Man

Elijah-Bear, 3 Months

 

Dear Eli,

I can’t believe you are already three months old! You have been growing and changing so much, and Mommy wants to slow it all down. Yesterday, I tried to hold back tears as I packed away all of your newborn and 0-3 month clothes. They are all way too small for my chunky monkey! You are 14.5 pounds and gaining everyday.

You are still breastfeeding and eat every 2-3 hours during the day, and usually just once at night. I love holding you close and smelling your sweet skin. We love to rock together as I sing you to sleep. The past three nights you have slept from 6:30 pm to 6:00 am! Mommy still wakes up every couple hours to check on you. Around 6:00 in the morning, you wake up to feed, and I bring you to bed with me. I love that time we get to snuggle and nurse as the sun comes up. It reminds me of the morning you were born. Back and forth, back and forth…you are still snoozing in your swing, but get ready, we are about to train you to sleep on your back in your co-sleeper! I hope it is not too hard for you to adjust.

During the daytime, you typically take a few 30 minute catnaps. You usually take one long one in the morning, about an hour after you wake up, and then another around 2:00. On good days, you take a few more in between. When you wake up, you stretch really big and smile. I love that.

Over the past few weeks, you have learned how to use your voice. You don’t coo as much as you used to, but instead like to squeal and giggle. As you can see, you are drooling up a storm; that glossy goodness is so dear and it makes me think you just might cut a tooth soon. If you aren’t drooling, you are blowing bubbles, which looks so cute on your pouty little lips. Mommy is constantly wiping your dimple chin, and changing your outfits…but I don’t mind.

One of my favorite things to do is to take you on a walk. We go to Arbor Hills when it’s nice outside and the motion of the stroller, along with the bright, warm sun is a surefire way to get you to sleep.

Your hands are your new best friends; they captivate you for hours and you are learning how to use them. If they are not in your mouth, they are grabbing at ring-o-links, your blanket, paci, or Mommy’s hair. It is so much fun for me to see you getting so dexterous. Sometimes, when you grab an object, you will stare so intently, like you are trying to figure it out. I can see curiosity growing inside you, and it gets me excited to answer all of your questions.

We have been doing a lot of tummy time and other strengthening exercises, and you can do a full baby pushup now. I figured out that you love tummy time best when you are naked. So, we do air time and tummy time together. You can roll over on both sides! I think it surprises even you when you topple over!

You love when I read you stories, especially the brightly colored ones that are sing-songy. Your favorite stories are Big Red Barn, The Bear Snores On, and Oh My, Oh My, Oh Dinosaurs! It is amazing how you study each page, you will look at one and then the other.

You are beginning to get some stranger anxiety…you follow me across the room to make sure I don’t wander too far. Most people don’t like this, but it let’s me know we have created the bond that I deeply desired.

You are my precious ‘lijah bear, my sweetest boy, and I feel so blessed each day that the Lord gives me with you.

Salad Challenge: Day 2

 

 

 

 

 

 

 

 

This salad is divine. The sweetness from the strawberries and dressing pairs beautifully with the tangy, creamy gorgonzola. The walnuts add crunch, and the cinnamon adds a little spice that makes you go, what is that?!

Six Day Salad Challenge…Because we all need one day off!

Baby weight…isn’t that all I have to say? I want to lose mine. So, I have challenged myself to come up with a few yummy salads that will fuel my creative side, and my tummy.

Brianna’s salad dressing was my inspiration for this challenge. It is made with natural ingredients, and every single flavor I have tried I have loved. I figured–I would compile a salad based on each dressing; that way all I have to do is throw together a bunch of ingredients and toss it with something I know is delicious.
